Request for Proposals: Production System Facility Host Site with 10M+ lb/yr Capacity

Updated: 12/20/2023

Christie Lagally

Seattle Food Tech, Inc., DBA Rebellyous Foods has completed design, initial build and testing of the Mock 2© Production System, a fully continuous, automated and chilled dough substrate processing system that can produce a wide range of plant-based meat products at 60% lower cost of manufacturing than all current dough making methods currently available to manufacturers. Rebellyous’ Mock 2© is poised to enable price-parity plant-based meat in the market in 2024. The System improves the
quality-at-scale of mix-and-form plant-based meat products, while producing continuously at volumes of 2,500-3,700 lb/hr with the potential to reach 5000+ lb/hr or more on a single processing line. Rebellyous’ Mock 2© technology is fully patented in the US and Canada under Seattle Food Tech, Inc. and is filed internationally.

Rebellyous is seeking proposals from USDA or FDA food processing facilities to locate and operate the Mock 2© Production System in early Spring 2024. The System consists of a primary continuous dough making system, an integrated control system, and auxiliary bulk material handling and custom sanitation equipment. Facilities must have roughly 25 x 35 floor space for installation and 23’ ceiling height is preferred. Facilities must have the capacity to post-process initially 10M to 25M lb/yr of plant-based meat products with a coatings line, as this Mock 2 will be deployed to make Rebellyous’ products and potentially other companies’ products.  Facilities must be located in the US, but those operators with facilities outside of the US are welcome to inquire to be considered for future Mock 2 deployments. Utility and additional specifications can be reviewed
here

This Mock 2© Production System is fully paid for by Rebellyous, and Rebellyous will maintain ownership of this equipment, software and auxiliary systems and data. The Mock 2© Production System is not for sale.

For production facility operators, Mock 2© Production System features:

  • Fully automated, continuous plant-based meat dough production
  • Labor-free, low-waste, low-energy processing
  • Internally, independently chilled subsystems (chilled facility not required)
  • High accuracy feeding: 1% error or less
  • Complete, chilled & continuous TVP hydration
  • Complete, chilled & continuous emulsification
  • Low shear, complete & chilled final dough mixing
  • Centralized process control HMI, internet enabled for off-site data collection
  • Integrated bulk material handling & custom sanitation equipment
  • Flexibility to work with a variety of recipe components and ingredients
  • IP recipe protection via secure data management system
  • Guaranteed consistent high quality production

Operational benefits of the Mock 2© Production System include:

  • Up to 90% reduction in workforce cost via automation
  • 25% reduction in sanitation staff
  • ⅓ footprint required vs. conventional equipment
  • Estimated 99% reduction in waste due to continuous production
  • Estimated 95% reduction in rework due to first-time quality
  • 80% reduction in energy usage due to localized chilling

Workforce benefits include:

  • Elimination of processing injuries due to fully continuous production
  • Elimination of cut injuries due to no rotating blade equipment
  • Elimination of repetitive task injuries due to high accuracy feeding
  • Elimination of cold injuries/risks (CO2, ice, workplace chilling) due to localized chilling
  • Minimizes working lifting with continuous bulk material handling system

Interested facility operators should send email inquiries to
